2-Minute Microwave Quiche

Living in a dorm situation always proves to be an interesting experience that often forces one to be creative. From organization and storage to cleaning and cooking, you definitely learn to maximize your resources. 

While I was spoiled with a full kitchen in the college dorms, the employee dorms where I'm currently located are much more rustic. Supplied with only a microwave, eating healthy has never been more difficult. Thankfully, I'm all for experimenting and and have made a few different versions of this 2-minute microwave quiche in a mug. 

Whether you're staying in a college dorm or hostel, or just need something in a pinch, this recipe is for you! 

Microwaveable Mug
Egg Beaters (Egg Whites)
Cheese (I prefer swiss cheese)
Other mix ins such as cherry tomatoes, avocado, zucchini, peppers, etc.

1. Fill the mug 1/4 full with the egg beaters.
2. Stir in a tablespoon of milk and add a little bit of salt and pepper. 
3. Tear bread into small pieces. 
4. Add in bread, cheese, and and mix ins. Stir.
5. Place in microwave for 1.5-2 minutes. Make sure to watch the mug because the quiche will grow out of the mug. If this happens, just open the door to the microwave, allow the quiche to fall back into the cup and finish cooking. 

The great thing about this recipe is that you can be flexible with the mix ins. You can add in what you want or have on hand. I enjoy my quiche with avocado and zucchini.

She Believed She Could...

Today's post really hits home for me. Zoe from La Vie en Zoe is such an inspiration as she blogs about her study abroad travels and I'm honored to have her write this piece on The Darling Daily. While I was able to study abroad in Costa Rica for a month, I always dreamed of studying in Europe. Preparing for my upcoming 3 month trip to Italy is terrifying and exhilarating all at once. I've been working my tail end off to save up some money for the trip (80 hours, darlings. No wonder I've been M.I.A. lately!). While the hours can get overwhelming I just keep in mind that all the hard work will be worth it when I'm living my dream in Italia. Doubts be gone as they have no time or place here! 


I wear this bracelet every day, and on it I have my mantra stamped.

“She believed she could, so she did.”

If a year ago you had told me that I would be living in a different country, speaking a different language, away from my parents and my beloved university, away from my sorority, my friends, and everything I knew, I would have laughed politely and called you crazy.

Here I am, friends. That crazy dream, that crazy fantasy, the nights I would lay awake thinking about France and baguettes, about traveling and seeing the world, those things are no longer dreams. They are very, very real.

Traveling Jeans

Hello October! This is going to be an incredibly busy month for me as I prepare for my one-way trip to Rome, Italy in November! Yep, you read that right, darling! In 6 weeks, I'll be packing my life into a backpack and uprooting to Rome where I'll be an au pair. I'm so excited for this next chapter of my life to begin and also extremely nervous! I feel like this is kind of spontaneous as I don't have much time to plan every last detail of the trip. It's an exhilarating feeling!

While I've been working excessively to save up every last penny for the trip, days off can be relaxing and also hectic. During the day I try to get as much done as possible in regards to researching Europe, any travel paperwork, and of course, trying to keep up with this beloved blog (evenings are saved for time with friends and at the beach). With Cedar Point so close, why not stage some fun photo shoots with the coasters and rides as a backdrop?! Halloween is right around the corner so the park is decked out for the spooky holiday. Hopefully, I'll be able to show you ore of the scenery in the coming weeks! For now, here's the carousel and a coaster called the "Corkscrew."
